So picture this: I wake up, let the dogs out, start the coffee, brush my teeth, and sit down at my laptop. This is my usual morning routine–nothing unusual about this day. Until… I go to one of my favorite blogs in the whole universe and realize that the Emily from the Jones Design Company posted about… me {here}! Well, okay… not really about me… but she mentioned me. I couldn’t believe it! Even more exciting, I found out that Emily had a party coming up and that I was the girl for the {invitation} job. Yes! Collaborating with other like-minded creatives is one of the best things in the world. I created the wording for the invite based on the super cute purpose of the party {if you’ve never been to Garnish, you must}, and I created the look of the invite to coordinate with the gift tags that Emily designed. Then, we divided and conquered. I designed the invite, Emily assembled, and then applied the design to all of the other paper for the party. Brilliant! Sometimes, you have time to make yourself a really legit breakfast. Sometimes you don’t. This past Saturday, I definitely did not. However, I was indeed in the mood to procrastinate from all the lovely lettering I had on my plate. It was too late in the morning to coheres anyone to meet me at Mary’s Market for breakfast for their famous eggs benedict {plus I pretty much blew the my allotted funds for this pay period last night}. Anyway, I’ve never made a poached egg before, so I decided that now was just as good a time to try as ever. I looked up a bunch of tutorials, and pretty much decided the key was just to put the eggs into a tiny bowl and very gently put it into the simmering {vinegared, salted} water. I love food, but this is hardly a cooking blog. So… sorry I can’t be more help in the way of directions. Google it, if you’re curious. I’d been craving the ham, swiss, and béchamel crepes my mom and I had for my birthday lunch, so I decided to try to incorporate that craving into my homemade brunch as well. Add a cup of coffee and a J.Crew magazine and I was all set! The only thing that would have made the morning better would have been an extra hour with nothing to do!.. and maybe some grilled asparagus. xo, linds

This afternoon I drove into Barrington to drop off some menus I created for a friendclient. It was such a fun little visit. I am always so inspired when I see other people’s living spaces–especially ones with dope {as Chrissy would say} wallpaper like Shauna’s. As a major plus, I got to sample the salted caramel butter toffee she was serving for dessert. GET OUT! Yum. {Can’t wait to share the stationary I created for her party with you!} After that fun little visit, I decided to make the most of my road trip and stop into downtown Barrington to experience 2 of my biggest weaknesses: clothes and cupcakes.

My first stop was Mia Sorella to vist my super fun and creative friend Emily. Emily’s been inspiring to look at and listen to from the moment I met her, and I was thrilled to get to finally see some of her windows in person! {Emily is a set/stage/window designer extraordinaire. See some of her work here: Emily Norah}. Okay, and maybe I shopped a little bit, too. {Which means I won’t be doing any more shopping for a very long time…}. Before I headed home, I stopped by Sweat Pea Cakes to get one of the Salted Caramel cupcakes I’d been craving since Randi brought me one for my birthday. It was pure heaven!

That yellow fabric under the necklace is a pretty little Tulle dress. And the cupcake in the picture is the Pretzelicious cupcake I brought home for D. But he better sleep with one eye open because it’s pretty much calling my name…

I’m blessed to have had a fun, relaxing, friday evening with some much-needed me-time. Whatever your weekend brings, I hope you get some you-time, too! xo, linds

So, when my friend Leah gives me a recipe, I listen. She is my go-to girl for tried and true recipes, and this recipe did NOT disappoint! Last week was a week of cooking firsts for me. 1st time I’ve ever made caramel {burned it the first time, second time’s the charm apparently} and the first time I’ve ever made curry. And I loved it! It was so, so chinchy and yummy. I hope you enjoy it as much as we did!

Leah’s Coconut Chicken Curry
• 1 – 1.5 lbs cooked, shredded chicken. {You can do this however you want. You can poach it, go easy and buy a pre-cooked rotisserie chicken from your grocery store, or bake it. I bake mine. Just place chicken on olive-oiled baking sheet, drizzle top with olive oil and salt and pepper, and bake at 350 until cooked through. About 30ish minutes, depending on how thick it is}.
• 1 can coconut milk
• 1 can petite diced tomatoes
• 1 8oz can tomato sauce
• 1/2 sweet yellow onion, chopped
• 2 cloves minced garlic
• 3 TBS curry powder
• 1/2 – 1 tablespoon sugar
• salt to taste

Directions: In a large, deep pot, saute onions with 1 tsp salt, in olive oil until near translucent. Add garlic over top of onions so it doesn’t burn, and cook until onions are translucent. Add curry powder and shredded chicken, stir until incorporated, and cook for another minute-ish. Add coconut milk, tomatoes, and tomato sauce. Add sugar {I used about a tablespoon} and salt to taste. Voilà! I served mine with brown rice {3 cups [uncooked] rice was the perfect amount for all the curry} and fresh green beans.

Varriations: Think of this as curry for beginners. You can probably do whatever you want with this recipe. My friend Chrissy adds golden raisins and chopped apples. If you’re a vegetarian, this would probably work sans chicken with some potatoes and vegetables in place of it. Yum! I’m hungry just thinking about it. Thanks for the recipe, sweet Leah!
